Celebrate Irish Cuisine with Arrowhead Golf Club's St. Patrick's Day Specials
Wheaton, Ill.-Everyone has some idea of Irish cuisine: hearty, rich meals that comfort you on bad days and make you grin on good ones. From Wednesday, March 9 through Sunday, March 20, Arrowhead Golf Club celebrates St. Patrick's Day with old standbys and something new.
The traditional Corned Beef and Cabbage is complemented with baby carrots and boiled red potatoes, and the stick-to-your-ribs Shepherd's Pie has all the good stuff: ground beef, peas, carrots, pearl onions, gratineed mashed potatoes, and parmesan cheese, plus a special Guinness-infused gravy.
But all cuisine is open to interpretation, and Executive Chef Alan Pirhofer has combined the meat-and-potato Irish staples with a crowd-favorite Mexican dish to make Irish Nachos.
"Everyone loves nachos and we wanted to put a St. Paddy's Day twist to it," said Pirhofer. "When we cut the corned beef-which is cooked here in house-there's often a lot of trim from the nice slices and we think, 'where else can we use this?' Let's put it together with the nachos and the potatoes and everything else. It comes out great."
Irish Nachos start with a bed of handcrafted potato chips, which are topped with delicate corned beef trimmings, green onion, and tomato horseradish sauce and finished off with the all-important cheddar cheese. The spirit of the meal, particularly the corned beef trimmings, is to waste nothing.
"It came out of the necessity of 'I'm not going to throw this away,'" Pirhofer said, reflecting a mindset that was often essential to working-class Irish families on limited budgets.
Out of these specials, the corned beef is Pirhofer's pride and joy.
"It's cooked much longer so it's much more tender," he said. "You don't need a knife to eat it."
Any St. Patrick's Day isn't complete without a pint of Guinness. On Thursday, March 17 only, each pint of Guinness will be $3.17, and Jameson shots will be $3.17 each.
Arrowhead's St. Patrick's Day specials will be available in lunch and dinner portions Wednesday, March 9 through Sunday, March 20. Arrowhead Restaurant and Bar, located within the clubhouse at 26W151 Butterfield Road, opens at 11 a.m. daily and only closes two days a year.
